Description

Bottarga is the grated roe pouch of grey mullet, massaged by hand to remove air pockets before being dried and salted with Italian sea salt, bringing out its almondy, slightly bitter flavor. Often referred to as the "caviar of the Mediterranean," bottarga (or bottargo) is a staple in Sicilian and Sardinian cuisine.
