Paprika is a spice derived from the air-dried fruits of the chili pepper species Capsicum annuum. Although commonly associated with Hungarian cuisine, the chilies used to make paprika originated in the New World and were introduced to Europe from the Americas. Initially cultivated in central Mexico, paprika made its way to Spain in the 16th century. It serves both as a seasoning and a coloring agent in various dishes.
