Our Bocconcini are freshly made to order. Bocconcini means "small mouthfuls" in Italian and are a fresh mozzarella that traditionally come in two sizes: a smaller size (about the size of a cherry tomato) and a larger size (about the size of an egg). We serve the smaller size.

Serving
To enjoy the full flavour of the mozzarella, consume on or within a few days of delivery at room temperature. A secret tip from our cheese maker: take the mozzarella out of the fridge, immerse the sealed container into a tub of 30-40 degree Celsius water and wait until the mozzarella warms to room temperature. Take the mozzarella out of the tub, unseal the container and serve.

Ingredients
Soft medium fat cheese, made of pasteurised milk, followed by acidification & coagulation, curd is separated and cut into small pieces, mjlled and subjected to a kneading and plasticizing process in hot brine, then balls are formed which are packed in trays with brine.
